Having spent countless nautical miles navigating the kitchen of Paros’ legendary Barbarossa, Chef Dimitris Nikolis now brings his journey to Sea You.

Every morning, he personally fills his fish counter with treasures from the nets of Chalkida’s and the Euboean Gulf’s fishermen, ready to star in an ever-changing lineup of flavors. 

His dishes are minimal without being plain, elegant without being distant, and traditional without ever feeling old-fashioned.

Just like him, they’re confident, curious, and a little rebellious.
